Bay is a member of the Lauraceae family native to the southern and eastern Mediterranean coasts. It is now the only genus of the family still to be found on mainland Europe. The Bay tree usually grows in scrub near the coast and in gorges, often by springs and streams. Bay tree can grow up to 15 meters high and is upright in habit when young. The highly aromatic leaves are usually 5 to 10 cm long, leathery and pinnately veined. Flowers, open in spring, have 4 petals, small, creamy-yellow in color and can be bisexual or unisexual. The berry-like fruits are 1 to 1.5 cm long and shinning black. Bay essential oil is extracted from its leaves through steam distillation.
