A member of the mint (Lamiaceae) family, Rosemary is an evergreen perennial herb native to the coasts of the Mediterranean. It can grow up to 6 feet high. The tinny, needle-like leaves, about 1.5 cm long, are dark green on one side and pale on the other. Rosemary is famous for its strong aromatic scent and powerful taste. It is now widely cultivated throughout Europe and North America for marinating food and beverages. Rosemary essential oil is extracted from the leaves by steam distillation.
